Baked zucchini

I love how easy it is to steam or bake zucchini. This versatile vegetable offers plenty of opportunities to create tasty and creative meals that are sure to be a crowd-pleaser. One our favorite family friendly recipes is a zucchini-bake and so it made sense to offer this to Simona. What’s good about it is that it works for parents and toddlers – so no need to cook another meal for you.


5-6 medium sized zucchini, grated

2 eggs

½ cup desalinated feta cheese

1 tsp baking soda

½ cup ricotta cheese

2 cups plain, whole milk Greek yogurt (I use organic, grass-fed yogurt)

2 tbsp flour (I use organic rice flour)

1 bunch dill, chopped

2 garlic cloves, finely grated

2-4 tbsp sunflower oil

1 tsp salt


  1. Preheat oven to 375F.
  2. Add baking soda to yogurt, mix well – it should start bubbling slightly
  3. In a medium bowl, whisk eggs. Add yogurt mix, ricotta and feta cheese and combine. Add grated garlic and dill and stir until combined
  4. Place grated zucchini in a large baking dish. Add yogurt and cheese mix and stir well
  5. Sprinkle oil over the mixture and mix well
  6. Sprinkle flour over the mixture and mix well
  7. Bake at 375F for about an hour – the top should have a light brown crust
