Banana muffins

Here’s a quick recipe, adapted from a banana bread recipe that is perfect for breakfast or afternoon snack.

Ingredients:

2 mashed bananas

1 egg

½ cup organic rice flour

1 tsp cinnamon

Directions:

  1. Preheat oven to 375F.
  2. Combine all ingredients together and mix well. Pour mixture into a muffin tin, pre-lined with paper liners
  3. Bake for about 20 min, until golden brown
  4. Serve with plain, whole milk yogurt

Total prep + cook time: 30 min
