Veggie rice with chicken

This is another recipe that works best if done at stages as most of it is prep work. You will need a food processor to shred the vegetables and then you have 2 options: prepare this recipe while they are fresh or divide up into portions and freeze. Enjoy!


1 cup vegetable mix – cauliflower, broccoli and carrots shredded with a food processor

1 cup finely chopped cooked chicken

1 tbsp chopped chives (optional)

1 tsp olive oil

½ tsp salt (optional: ½ tsp garlic powder)


  1. Heat olive oil over medium heat
  2. Sautee vegetable mix until tender, about 15 min (note: if your veggies are frozen, you can place them directly in the pan without adding additional water. If using fresh mix, add ½ cup water 2 min after adding to the pan).
  3. Add chopped chicken, chives and spices and cook until all water has evaporated (about 10 min).
  4. If the veggies need more cooking, add more water and cook until tender and water has evaporated. It is important that the veggies are soft; otherwise, baby may be discouraged by the tougher consistency.
